What counts as local food?
Spain has no single legal definition of “km 0” or “local food”. Three criteria are used:
100 km
Slow Food asks its Km 0 restaurants to buy directly from producers based less than 100 km away.
Few intermediaries
Rules on local sales count intermediaries: none in direct sale and at most one in a short supply chain.
Territory
Some regions add a limit: Navarre, its territory or up to 100 km from the farm; the Balearic Islands, the region or under 90 km; Murcia, the same comarca or its neighbours.

How it is measured
Distances are straight-line, not by road: from the midpoint of the chosen municipality's producers, as in search, or from your location.
Producers of each type of food and those who mention it in their products or profile, as in search.
Only Chisan producers with a reviewed location count. A count does not certify where each ingredient comes from or that anything is in stock: ask the producer.
That is why you choose the radius here: 10, 25, 50 or 100 km in a straight line.
Sources
Each criterion cites its primary source; the counts read Chisan's reviewed catalog.
