Utiliza únicamente las uvas de sus fincas. Poda buscando la calidad del racimo, sigue la maduración y vendimia manualmente después de que se seque el rocío. Despalilla al llegar a la bodega y elabora sin añadir levaduras ni clarificantes, con dosis bajas de sulfitos.
